10-minute Mexican sloppy joes

  The kids will love these Mexican inspired  burgers which are packed with beans for added fibre. INGREDIENTS 1 tablespoon olive oil 300g can corn kernels 300g beef mince 420g can Heinz Beanz Creationz Fiery Mexican Style Beanz 1/2 teaspoon Mexican chilli powder 1 avocado 60g Mexican-flavoured vintage cheddar 2 tomatoes 4 brioche burger buns 1 lime Fresh coriander leaves, to serve  METHOD Step 1 Heat the oil a large frying pan over high heat. While the pan heats up, drain the corn. Step 2 Once the pan is hot, add the beef and cook, stirring with a wooden spoon to break up any lumps, for 3 minutes or until browned. Add the corn, beans and chilli powder. Stir to combine. Reduce heat to low and cook for 5 minutes or until thickened slightly. Step 3 Meanwhile, halve the avocado and slice flesh.   This is a luxurious, lavish, buttery, and decadent dessert. The top is crunchy and the inside is light and custard-y. Delicious served with a dollop of freshly whipped cream. Step 1 Preheat the oven to 225 degrees F (110 degrees C). Line a baking sheet with parchment paper and spread out croissant cubes on top. Step 2 Bake in the preheated oven until croissant cubes are very dry, 30 to 35 minutes. Turn off the oven and cool cubes slightly. Step 3 Lightly spray a 9x13-inch baking dish, add dried croissants, and evenly distribute the blueberries among the croissant cubes.
